Miso soup is a Japanese soup made with fermented soybeans. It’s a popular dish in Japan and around the world. It’s also one of my favorite things to make because it’s not too complicated to prepare. It’s essentially just a bean paste, but it has an incredibly rich taste. Add some chunks of tofu, vegetables or noodles to make a quick healthy meal – which is also suitable for vegans.
Traditional miso soup is made with dashi – which is a Japanese sea broth which includes dried fish flakes. If you are cooking for vegetarians or vegans, or if you are in a rush or can’t get the traditional ingredients, you can always use a clear vegetable stock as the base. It won’t taste quite the same, but it still makes for a delightful soup.
There are different types of miso paste available which you can use in soup and the one you choose will largely be dependent on what you can buy locally and which you prefer. When we can, we choose the white miso paste as it has a slightly milder flavour – however part of the fun in cooking is trying new things so if you can, get a few different pastes and see which you and your family prefer.
While miso soup can be a quick and easy soup to make, don’t overlook the benefits of it!
