Use Dried Beans in Soup

We use chickpeas (garbanzo beans), lentils (lentils), or black beans in most of our soups because they all yield similar results, and it’s important to know how to cook them correctly.
Beans are one of the greatest sources of fiber, protein and vitamins. Nowadays, they are also often used to make a filling alternative to meat in many vegan and vegetarian recipes including soups. However, they can be a bit tricky to prepare. The trick is to soak the beans overnight and then soak before cooking them. For dried chickpeas, it is best to soak them overnight, but you can leave them out for a few hours. For dried lima beans, you need to soak them overnight to make sure that they are fully cooked and with kidney beans, it’s important that they are boiled for at least 10 minutes to get rid of any toxins.
