Filling, delicious, cheap – tomatoes are a versatile and tasty food which can be enjoyed in many ways – not least in soup. My favorite recipe for tomato soup is the one I made at my mom’s house this weekend: canned tomatoes, onions, garlic, and spices. There are endless variations of tomato soup recipes out there, but this one is one of my favorites. It’s easy to make and only requires a few ingredients and it tastes just like the best tomato soup you’ve ever had!

We ate it with crusty bread and some slivers of hard cheese accompanied by a glass of red wine – it was delightful!

However, there are many other ways to make tomato soup. Many using fresh tomatoes, which just can’t be beaten. This is an ideal way to use up super-ripe tomatoes which come at the end of every summer.
