Gazpacho is a traditional Spanish soup, made with tomatoes, cucumbers, garlic, basil and olive oil. It’s a very simple dish and as you can imagine it’s easy to make. It goes well with crusty bread and makes a light lunch to enjoy on hot days.

Gazpacho is a popular Spanish cold soup that is often served as a starter or as a light lunch in Spain. It consists of tomatoes, onions, garlic, peppers, and cucumbers. Gazpacho is traditionally made with fresh tomatoes and cucumber, but canned ones are widely used. The soup’s main flavor comes from the sliced and blanched peppers. To prepare gazpacho, you need to peel the vegetables and remove the skins from the peppers. Cut them into small pieces and then chop them finely with a knife or food processor.

Traditionally, the ingredients would be pound into a pulp using a pestle and mortar, but today they are more likely to be blended using a food processor.

We often vary the proportion of ingredients depending on the season and availability.
