Onion soup is another versatile soup. Just cook up the onions on their own with seasoning and then blitz them and stir in cream for a delightfully rich and creamy onion soup – or try the deliciously savory French onion soup where the caramelized onions add to the flavour of the dish.
Onion soup also has the benefit of being low in calories (assuming you avoid cream and using lots of oil 😉 ) and it is also a soup that works well for vegans and vegetarians, as well as meat eaters. The onions add plenty of flavor on their own, particularly when caramelized. While traditional French Onion soup recipes use a beef stock, the soup is equally delightful for vegetarians and vegans when made with a vegetable stock.

Caramelized onions make a great topping for many soups – try adding some to the top of a tomato soup for some additional flavour.
While caramelized onions aren’t ‘that’ hard to do, they are pretty tricky to do correctly without leaving uncooked bits of the onion or having a few burned pieces of onion around the edge.
