However, they can be a bit tricky to prepare. The trick is to soak the beans overnight and then soak before cooking them. For dried chickpeas, it is best to soak them overnight, but you can leave them out for a few hours. For dried lima beans, you need to soak them overnight to make sure that they are fully cooked and with kidney beans, it’s important that they are boiled for at least 10 minutes to get rid of any toxins.

Did you know – Victorians loved bean soup, even though it was too rich for the average diet. The first mention of bean soup in the UK appears in a 17th-century cookbook of English cuisine.
